- Ensures and provides flawless, upscale, professional and high-class guest service experiences as a role model and expertise in all kitchen related matters.
- Be an exemplary role model in inspiriting team members through strong demonstration of the Capella Culture and Service Philosophy.
- Assists the Chef de Partie in running of the assigned work station.
- Provide the highest level of guest comfort and ensures the delivery of the Capella brand, values and vision, to create an amazing experience for our guests and team members.
- Assists the chefs in mis-en-place preparation, ensuring that only fresh ingredients of the highest quality is used.
- Prepares all guest orders, noting special dietary preferences in accordance with production requirements and quality standards while maintaining a safe and sanitary work environment.
- Perform opening and closing duties as assigned by supervisors and handle all HACCP forms on a daily basis.
- Maintain proper security and storage of inventory supplies in a timely manner to minimise wastage and pilferage.
- Ensures that the assigned working areas, kitchen equipment and tools are kept clean and organised at all time.
- Coordinates with the Executive Chef during the annual developments of budget, CAPEX and man power planning.
- Ensures accurate maintenance of recipes, conversion recipes and product specifications.
- Ensures that the daily order list will be on time, purchased the best possible food and prepared according to the needs of the individual Kitchen.
- Adhere to the Health, Hygiene and Safety guidelines and operating procedures set by the hotel.
- Attends and proactively contribute to all staff meetings Departmental and Hotel trainings scheduled and other related activities.
- Report any issue or damages and breakdowns within working areas and the hotel to ensure a defect-free facilities and service amenities provided.
- Recognises the importance of LQA and Forbes standards as to deliver excellent audit and service performance.
- Maintains strong working relationships with other departments to ensure effective communications for operational issues, serves as a role model for inter-departmental collaboration and support
- Protect the privacy and security of guests and coworkers.
- Diploma in Culinary Arts of equivalent certifications
- Experiences in similar role at luxury hotels/resort
- Excellent interpersonal skills with personable character, a team player and good at cultivating strong guest relations
- Basic command in spoken and written English
- Knowledge in culinary techniques
